For his domestic food creations, Michelin-starred chef Maximilian Lorenz from the eponymous Michelin-starred restaurant in Cologne relies on quality "made in Germany" for the kitchen technology.

As a native of Bergisch Gladbach, Maximilan Lorenz has always had the dream of cooking. He realised this with his training as a chef and then, at the beginning of 2012, in the pretty Belgian quarter of the cathedral city, when he took over his first own restaurant, "L'escalier".

With the opening of his restaurant "maximilian lorenz", the star chef not only opted for the highest quality ingredients and top-qualified staff, but also for premium equipment in his kitchen.

„No compromises: Only the best is used in my home aroma kitchen! Of course, the same goes for the technology.“

PALUX offered him the perfect space for his gastronomic concept and, in addition to delivery and installation, also took care of the complete project management. From the dismantling of the existing technical building equipment, to the new construction of the technical building equipment, to the removal of the ventilation and the ceilings - the contract management took over the complete coordination of the trades on the construction site.

Regionality and seasonality play a major role for the chefs, who aim to reinterpret familiar German dishes in a modern and playful way, thus guaranteeing the refinement and further development of German flavour cuisine.

The centrepiece of the top kitchen is the customised, seamless PALUX Maître cooking block. This includes two 4-zone induction range and two Vario Pans. The kitchen, designed to the highest standards, is rounded off with matching stainless steel furniture and other appliances, such as two of the PALUX Touch 'n' Steam combi steamers, a PALUX Salamander and a FunctionLine Range 800 Plus.

Maximilian Lorenz was named Newcomer of the Year (Gusto) shortly after taking over from the restaurant "L'escalier". After only a few months, Gault & Millau raised the rating of the kitchen to 17 points and shortly afterwards the young gastronomic entrepreneur received his first Michelin star. Likewise, he became a member of Jeunes Restaurateurs d'Europe (JRE) in 2016.

In the new gourmet restaurant, which now bears the name of the young top chef, Lorenz concentrates entirely on local dishes - and develops them into culinary delights. Here, Maximilian Lorenz and his team have earned their first Michelin star after only 9 months.
