The Hemingway – Bar & Restaurant

The Hemingway is located in the city of Weiden, in the heart of the Upper Palatinate. Besides a top modern bowling alley, two arcade halls and “rock-darts”, the restaurant with its large menu offers a great variety of food. From burgers and pizza to schnitzel and fish dishes – at the Hemingway, everyone will find something for their taste.

The opening hours are remarkable: 7 days a week the “Hemingway” is open from early in the morning until late in the evening. No matter if breakfast, lunch, a small snack in between or a cosy dinner – visitors are guaranteed to find something delicious on the menu.

To make this possible, the restaurant kitchen was rebuilt in mid-2017 and brought up to the latest state of the art. Since then, the kitchen line PALUX Topline as well as deep fat fryers of the series PALUX Fry Star and PALUX stainless steel furniture from the Ecoline series are in use. The team around owner Susanne Bauer can thus prepare between 300 and 600 meals daily. A total of 25 full-time and part-time employees in the kitchen and service department as well as another 25 temporary staff are working at the Hemingway. The 300 indoor seats and 60 seats on the outdoor terrace are always in great demand. Thanks to optimised kitchen processes and reliable technology, hungry guests do not have to wait long for their meal.

During the reconstruction: Operation continued smoothly with rental equipment from PALUX

The "Hemingway" remained open during the only 3-month reconstruction phase. According to Susanne Bauer, from a business management point of view, this would not have been possible otherwise. Consequently, several tents were set up on the parking area and a number of PALUX rental units were temporarily installed. This meant that improvised kitchen operation was still possible despite the conversion, albeit with a reduced range of food – and of course in accordance with the legal hygiene regulations.

Therefore Susanne Bauer is more than satisfied with PALUX: “Before starting the project, I visited about 10 different kitchen manufacturers. It was always important for me to know who could supply the best and most suitable appliances for my needs. PALUX was able to convince me above all by the perfect consulting and planning service, the overall concept, the impressive factory tour and the practical test cooking with the PALUX application consultants. The time schedule coordination of all construction companies and other suppliers such as ventilation and refrigeration technology went off without a hitch. Lots of plates, but little hustle and bustle: up to 600 meals leave the kitchen per day

Susanne Bauer explains further: “With the help of the new Topline kitchen, processes have been improved and revenues have increased noticeably. Considerably more food can be produced with much less stress. And that even at peak times! There are days when we send up to 600 dishes. For the employees this means an immense relief.  And the guests also notice this, because they get their food served much faster.”
