High above the rooftops of Merano, right on the Tyrolean trail, the Saxifraga Stub’n is a popular excursion destination. On the terraces situated above the old town, guests can enjoy the panorama from the Texel group to the Dolomites – and South Tyrolean specialties from the new PALUX kitchen.
As a former private house and one of the first guesthouses, Saxifraga was a popular honeymoon domicile for newlyweds. In 1995 the owners changed, and today’s host family Markus and Raffaella Brunner serve exquisite, finest cuisine to their guests.
At the beginning of 2017, our long-standing local partner, Langebner Gastrosystem, completely renovated the kitchen. The planners faced major challenges, as the rooms offered limited possibilities. They came up with a perfect solution after a planning phase of several weeks. A kitchen concept emerged that embodies the requirements of the upscale cuisine and has a visually appealing ambience. Due to the help of a CAD planning system, the previously contorted space got a new makeover: A room with clear structures and subsequent rendering. Walls have been removed and a natural stone carpet had been laid on top of the former, difficult to clean tile floor. The colours reflect the discoverer spirit of Chef Vincenzo Aiello.
Dishes from the South Tyrolean lamb, regional beef, olive bread and various grissini, homemade pasta and delicious sweets are imaginatively produced on these new PALUX thermal devices like the PALUX Vario Pan, a multifunctional appliance for roasting, steaming, cooking and stewing. All devices have been precisely installed by Langebner Gastrosystem.
The kitchen has an overall size of 23 m2 and also accommodates an extensive preparation zone next to the multifunctional PALUX Topline thermal line. The heating cabinet from the PALUX Ecoline furniture range warms up plates and cups, and the Ecoline heated bridge with halogen lamps ensures that the dishes remain hot during preparation. The refrigeration and deep-freezing elements installed throughout the kitchen enable a quick response to any culinary request by the customers.
Family Brunner, who also runs the Saxifraga Kurhaus with a restaurant and a wine bar right by the river promenade, has a wide range of fresh, homemade specialties and a special atmosphere for its guests – tourists and hikers, locals and newlyweds – in both locations.
